Meatless Monday: Cold Cucumber Yogurt Soup
This would be perfect for a hot summer day served with a big loaf of French bread. But, the sun is not shining and bread is not allowed for one more day.At the end of last summer I had an overwhelming about of fresh mint, as all gardeners know the herbs grows like a weed. This is a perfect recipe to use a substantial amount.
I served with a basic salad of tomatoes and avocados.
I was convinced my kids would love this as they happily gobble up yogurt daily. My daughter refused to taste it and after I forced my son a spoonful he proceeded to gag. Maybe it is an acquired taste.
My husband and I enjoyed the flavors, but couldn't finish our large portions. It is rich and intense and would be better in a smaller quantity. I can see how it would be refreshing on a hot day.
The good news is the routine of Meatless Monday has guaranteed my family at least one weekly dinner where we discuss our day and review our plans for the week ahead. I find it a calming start to the week that seems to get more chaotic as each day passes.
